Grain sprouting
Amaranth grain is awakened under controlled conditions. Enzymes activate, nutrient density rises, and their bioavailability increases many times over. Sprouted grain is living food.
Cold maceration
The sprouted grain is milled and infused for 15 days — stirred constantly, following an ancient recipe — in corn-germ and amaranth oil. Slowly. Without heat. Everything oil-soluble (squalene, tocotrienols, phospholipids) moves into the oil phase. Everything that isn’t (B vitamins, amino acids) stays in the flour — and you get both.
Why corn-germ oil and not olive or flax
- The germ is the part of the grain a new plant grows from. It concentrates the life force: vitamins, enzymes, fatty acids.
- Like amaranth, the corn germ is sprouted before pressing. The grain awakens — and only then is first cold-pressed oil gently drawn from the germ.

Squalene
A natural oxygen carrier to every cell. Involved in the synthesis of hormones and vitamin D. Chemically identical to the squalene produced by the human liver — the body doesn’t tell “its own” from “natural”. Squalene synthesis peaks at 15–20 years of age and begins to decline around 20–25 (with a marked drop after 30). By 50 the body’s squalene level can fall by more than 80–90% compared with youth.

8000 years of amaranth history
“The unfading” — as the Greeks named it.
The very word “amaranth” came from Ancient Greece: amarantos means “unfading”. For the Greeks it was a symbol of immortality and eternal life. There’s a fable by Aesop in which the rose envies the amaranth. “You are beautiful,” says the amaranth, “but you live a single day. I bloom forever.” By legend, amaranth adorned the tombs of heroes — even the grave of Achilles. The flower that does not wither became a sign that the true does not die.
The grain of the gods — as the Aztecs revered it.
To the Aztecs amaranth — huauhtli — was sacred, on a par with maize. From its seeds and honey they moulded figures of gods and ate them during temple rites — a kind of ancient communion. It was this sanctity that nearly destroyed the plant. The Spanish conquerors deemed the rites blasphemous and forbade growing amaranth on pain of death. For centuries the grain lived in secret, in remote mountain villages — and still it returned. It could not be erased from history.

In the Inca empire amaranth was called kiwicha. It was thought to give strength — it fed warriors and the legendary chasqui runners who, day after day, crossed mountain passes carrying news across the empire. The grain of endurance. Food for those who go farther than others.

In India amaranth has two names. Rajgira — “the raja’s grain”, the royal grain. And ramdana — “the grain given by god”. It is still eaten on days of sacred fasting, when ordinary cereals are forbidden — pure food, worthy of both human and deity.
